How to make it:
Fill a small saucepan with water and a pinch of salt, bring to the boil
Meanwhile prepare your chicken breast and vegetables
Slice all the vegetables, dicing the onion and place to one side; then cube the chicken breast into decent sized pieces making sure to remove any entrails that may be left
In a wok place a small amount of olive oil, once it has heated up add the onion and lightly brown
Add the chicken to this and cook until there is no pink left in the meat, you may require a small amount of water to add to the pan at this point to avoid the chicken from sticking to the bottom and burning (ensure it is stirred regularly as the chicken will stick)
The water in the small pan should be boiling now, add your tagliatelle balls and cook for around 7-9minutes, stirring occasionally to prevent any sticking (also to prevent the water from boiling over whilst cooking simply reduce the heat on the stove, the water should continue to boil/simmer but this will decrease the intensity
Going back to the chicken, once it seems that the chicken has cooked through (will take around 5 minutes) add the broccoli, courgette, and mushroom to begin cooking, add a little more water to the pan to slightly steam the vegetables, once the courgette starts to soften add the pepper and continue to cook for a further 2-3minutes
One the tagliatelle is cooked, drain the water and rinse once or twice with some boiling water, then add the pesto and return to the hob momentarily to ensure it is piping hot
You are now ready to serve, add seasoning to your preference and enjoy
